Snickers Brookie Skillet

 

Ingredients

Chocolate Chip Cookie Dough

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 3/4 cup light brown sugar
  • 1 egg room temperature
  • 1 egg yolk room temperature
  • 3/4 cup melted butter slightly cooled
  • 1/2 tsp baking soda
  • 3/4 tsp sea salt
  • 2 tsp vanilla extract
  • 1 1/2 cup semi-sweet chocolate chips

Double Chocolate Chip Cookie Dough

  • 1 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup melted butter slightly cooled
  • 1/2 cup granulated sugar
  • 1 egg room temperature
  • 1 egg yolk room temperature
  • 3/4 cup light brown sugar
  • 1/4 tsp instant coffee powder optional
  • 3/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1 cup dark chocolate chips
  • 2 tsp vanilla extract
  • 1/2 cup jarred salted caramel or homemade
  • 1 full-size snickers bars, chopped feel free to add more or less!
  • 1/2 cup semi-sweet chocolate chips

Instructions

Chocolate Chip Cookie Dough Instructions

  • Sift together the flour, baking soda and salt; set aside. In a medium bowl, cream together melted butter, brown sugar and white sugar until well blended. Add eggs, one at a time, until light, creamy, and fluffy, making sure to mix in between. Add vanilla extract. Mix in dry ingredients stir just until mixed in, do not overmix! Stir in the chocolate chips. 

Double Chocolate Chip Cookie Dough

  • Sift together the flour, cocoa powder, baking soda, instant coffee and salt; set aside. In a medium bowl, cream together melted butter, brown sugar and white sugar until well blended. Add eggs, one at a time, until light, creamy, and fluffy, making sure to mix in between. Add vanilla extract. Mix in dry ingredients stir just until mixed in, do not overmix! Stir in the chocolate chips. 

To Make the skillet

  • Preheat oven to 350 degrees F.
  • Take 2 cups of the chocolate chip cookie dough, and 2 cup of the double chocolate chip cookie dough
  • In a 8-10 inch cast iron skillet. Place double chocolate chip cookie dough.
  • Press down gently.
  • Top with 1/2 cup caramel. Spread but make sure not to get it to the edges completly so it does not burn. Arrange the chopped snickers and chocoalte chips over the caramel.
  • Top with the chocolate chip cookie dough. Make sure the caramel and snickers are covered with the cookie dough!
  • Bake for 22-25 minutes. Let cool for 10 minutes before digging in!

Notes

Note: We like our skillet cookies slightly undercooked. As it sits it will continue to cook from the residual heat. If you prefer, you can cook for an extra 5 minutes. 
*If you don't have a skillet, you can use a baking pan. You may have to adjust the baking time
