Is banana bread good for you?

Even though it tastes delicious, banana bread has a lot of nutrients! Bananas are rich in vitamin B, potassium, magnesium and fiber. Ripe bananas have a great amount of natural sugars. This means we don’t need to use as much brown sugar for this banana bread to be sweet!

We use coconut oil for our banana bread. Compared to other cooking oils, coconut oil has many antioxidants and is high in vitamin E. All cooking oils are fairly high in fat, so we recommend using any oil in moderation. But coconut oil is one of our favorites!

How to make sheet pan banana bread

  1. Peel the ripe bananas and drop them into a large bowl. Mash them with a fork or spatula.
  2. Stir in brown sugar, oil, milk and eggs until combined. Pour in the vanilla extract and mix.
  3. Separately, combine the salt, flour and baking soda in a medium bowl.
  4. Slowly incorporate the dry ingredients into the wet.
  5. Once the batter is thoroughly mixed, fold in half of chocolate chips.
  6. Spray a sheet pan with non-stick cooking spray.
  7. Pour the banana bread batter into the sheet pan.
  8. Sprinkle the rest of the chocolate chips on top!
  9. Bake in the oven for about 20 minutes at 350 degrees.
    • Note: We recommend checking at 18 minutes by sticking a wooden toothpick into the cake. If it comes out crumbly, you need a minute or two longer, if it comes out clean your banana bread is ready!
  10. Allow the banana bread to cool and cut into squares.

What to add to your banana bread

Personally, we love a simple chocolate chip topping for our banana bread! It adds just the right amount of sweetness to every bite. But there are plenty of toppings you can mix in!

If you are a big fan of nutella, you should try mixing in hazelnuts! Any crushed nut actually works really well in banana bread. We also love peanut butter chips (sometimes also called peanut butter morsels)!

This sheet pan banana bread is easy, flavorful, and nutritious. Bring this to your next brunch potluck or make it for breakfast!

Ingredients  

  • 4 medium very ripe bananas
  • 3/4 cup light brown sugar
  • 1/4 cup melted coconut oil
  • 1/4 cup milk of choice
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3/4 cup semi-sweet chocolate chips

Instructions

    3/4 cup semi-sweet chocolate chips
  • Spray an 11x7 sheet pan with non-stick cooking spray. Pour the banana bread batter into the sheet pan.
  • Sprinkle the rest of the chocolate chips on top.
  • Bake in the oven for about 18-20 minutes until a toothpick comes out clean.
  • Allow the banana bread to cool and cut into squares.
