Paleo Chocolate Stuffed Chocolate Chip Cookie
Ingredients
- -2 cups sifted blanched almond flour
- -1/2 teaspoon baking soda
- -1/4 teaspoon sea salt
- -3/4 cup semi sweet chocolate chips
- -2 oz chocolate bar 4 large squares, we used half a Ghirardelli 4 oz baking bar
- -1 egg beaten
- -1/3rd cup maple syrup
- -1/4th cup coconut oil melted
- -1 teaspoon vanilla Extract
Instructions
- Preheat oven to 350 F.
- Grease a 6″ cast iron skillet.
- In a large bowl, mix together the almond flour, baking soda, and salt.
- Add the maple syrup, coconut oil, vanilla extract, and egg.
- Stir the wet ingredients into the dry until evenly mixed.
- Add half the dough in the skillet. Place chocolate bar. Spread remaining dough. Top with the chocolate chips. Bake for 25-30 minutes or until golden on top.
