Oven "Fried" Chicken

  • 8 boneless skinless chicken thighs
  • Kosher salt and freshly ground black pepper to taste
  • 2 large eggs beaten
  • 1/4 cup milk
  • 1 1/2 cups organic bread crumbs
  • 1 teaspoon smoked paprika
  • 1/2 garlic powder
  • 1/2 teaspoon cayenne pepper more or less, to taste
  • 1/4 cup olive oil
  • 1 cup organic unbleached all-purpose flour
  • 1/2 teaspoon kosher salt more or less to taste
  • 1/2 teaspoon freshly ground pepper
  • Honey Mustard Sauce
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon mustard
  • 1 tablespoon Dijon mustard


  • Preheat oven to 375 degrees F. Spray a sheet tray with non-stick spray or use parchment paper.
  • Season chicken thighs with salt and pepper, to taste.
  • In a large bowl, whisk together eggs and milk. In another large bowl, combine bread crumbs, paprika, garlic powder, cayenne, oil, and salt and pepper, to taste.
  • Dip chicken in flour, then into the egg mixture, then in the bread crumb mixture, pressing to coat.
  • Place chicken onto baking sheet and bake for 35-40 minutes, or until chicken is cooked through and golden
  • While chicken is cooking make the honey mustard sauce. Add all the ingredients in a bowl and whisk until combined.
  • Serve immediately with honey mustard sauce.
