  • 1 package white bread such as Canyon Bakehouse Gluten Free bread
  • 1/2 lb lean ground beef or sausage
  • 4 slices colby jack cheese
  • 1 cup grated white cheddar cheese
  • 1/2 cup bell peppers chopped
  • 6 large eggs such as Organic Valley organic eggs
  • 1 cup whole milk
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper


  • Preheat the oven to 350 degrees F.
  • In a large bowl, whisk together the eggs, milk, salt and pepper. Set aside.
  • Cut the crusts from the bread. Arrange in a single layer in the prepared baking dish, cutting pieces to fit as necessary to cover the bottom of the dish. Pour 1/3rd of the egg mixture over the bread. Sprinkle with beef, peppers, and cheese slices. Pour remaining milk mixture over the bread. Top with shredded cheese.
  • Bake until set and golden, about 40 minutes. Let stand for 10 minutes before serving.
