Grown-Up Baileys Easter Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 3/4 cup unsalted butter melted and slightly cooled
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 egg + 1 egg yolk at room temperature
  • 1 cup chocolate covered candy
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips

Instructions

  • Preheat the oven to 325 degrees F.  Whisk together the flour, baking soda and salt; set aside. In a medium bowl, cream together melted butter, brown sugar and white sugar until well blended. Beat the vanilla, and eggs until light and creamy. Mix dry ingredients until stir just until blended. Stir in both the chocolate chips and candy. Scoop 2 tablespoons dough and place on greased cookie sheets. Make sure to leave space between cookies to leave room for spreading. Bake for 12 to 14 minutes in the preheated oven, or until the edges are lightly browned. Let set for a few minutes before transferring to a wire rack.
  • *if you have time, refrigerate the dough for 30 minutes before baking.
