For the Strawberries
- 16 ounces strawberries sliced in half
- Lemon zest
- 1 Tablespoon sugar
- 1 Tablespoon balsamic vinegar
For the Goat Cheese
- 8 ounces goat cheese
- ¼ cup ricotta cheese
- 2 Tablespoons water + more for thinning
- 2 Tablespoons lemon juice
- Honey to taste
- Basil for garnish
Preheat the oven to 350° Fahrenheit.
Slice the strawberries, and add them to a baking dish.

Sprinkle the lemon zest, sugar, and balsamic on top.

Bake for 30 minutes.
In the meantime, add the goat cheese, ricotta, water, and lemon juice to a blender. Pulse until smooth and creamy.

Add the ricotta mixture to a bowl. Top with the baked strawberries.
Drizzle honey on top to taste, and add fresh basil for garnish.
