Ingredients

For the Strawberries

  • 16 ounces strawberries sliced in half
  • Lemon zest
  • 1 Tablespoon sugar
  • 1 Tablespoon balsamic vinegar

For the Goat Cheese

  • 8 ounces goat cheese
  • ¼ cup ricotta cheese
  • 2 Tablespoons water + more for thinning
  • 2 Tablespoons lemon juice
  • Honey to taste
  • Basil for garnish

Instructions

  • Preheat the oven to 350° Fahrenheit.
  • Slice the strawberries, and add them to a baking dish.
    16 ounces strawberries
  • Sprinkle the lemon zest, sugar, and balsamic on top.

  • Bake for 30 minutes.
  • In the meantime, add the goat cheese, ricotta, water, and lemon juice to a blender. Pulse until smooth and creamy.
    8 ounces goat cheese, ¼ cup ricotta cheese, 2 Tablespoons water + more for thinning, 2 Tablespoons lemon juice
  • Add the ricotta mixture to a bowl. Top with the baked strawberries.
  • Drizzle honey on top to taste, and add fresh basil for garnish.
