Easy Feta Toast

Feta Toast is our spin on one of our favorite Egyptian breakfast, Gibna bil Tamatim.

Ingredients

  • 8 ounces feta cheese
  • 1/4 cup sour cream
  • 1 teaspoon dried mint
  • 3 teaspoons olive oil
  • tomatoes on the vine
  • cucumbers
  • sourdough bread or your favorite bread toasted
  • option to add jalapeños or crushed red peppers
  • olive oil dried mint, and sea salt for garnish

Instructions

  • On a plate add feta cheese and sour cream.
    8 ounces feta cheese, 1/4 cup sour cream
  • Place the dried mint in the palm of your hands and rub together to release the oils, sprinkle the mint on the feta and sour cream.

  • Drizzle with 3 tsp olive oil. Mash with a fork.

  • Slice tomatoes and cucumbers in really thin slices.

  • Spread as little or as much feta mixture on toasted bread.

  • Top with tomatoes and cucumbers. Garnish with more dried mint, olive oil, and sea salt.
