Ingredients

  • 16 ounces pound cake cut into 1-inch cubes
  • 16 ounces strawberries quartered
  • 16 ounces blueberries
  • 8 ounces raspberries
  • 1/2 cup granulated sugar
  • 2 Tablespoons fresh lemon juice
  • 8 ounces mascarpone cheese
  • 2 cups prepared vanilla granola or your favorite granola
  • vanilla ice cream for serving

Instructions

  • In the slow cooker add pound cake, berries, sugar, and lemon juice. Dot with mascarpone cheese. *Optional: Mix all the berries in a bowl with sugar and lemon juice before pouring over the pound cake!
    16 ounces pound cake, 16 ounces strawberries, 16 ounces blueberries, 8 ounces raspberries, 1/2 cup granulated sugar, 2 Tablespoons fresh lemon juice, 8 ounces mascarpone cheese
  • Cover and cook on high for 2 hours. The juices from the berries will soak into the pound cake. Top with granola. Serve warm with a scoop of ice cream!
    2 cups prepared vanilla granola or your favorite granola, vanilla ice cream for serving
