Billy Miner Ice Cream Pie

If you love ice cream, you will love this pie! Loaded with crushed cookie layers, a thick fudge layer, coffee ice cream, and whipped topping. Top with sliced almonds, caramel, and chocolate sauce!

Ingredients

  • 1/2 cup butter divided
  • 36 Oreo cookies crushed
  • 3 ounces unsweetened dark chocolate
  • 2/3 cups granulated sugar
  • 2/3 cups evaporated milk
  • 1 teaspoon vanilla extract
  • 1 1/2 quarts coffee ice cream such as Haagen Daaz, slightly softened
  • 1 cup heavy whipping cream
  • 3 Tablespoons confectioners’ sugar
  • 1 cup sliced almonds

Instructions

  • Melt 1/4 cup butter in the microwave or in a small stock pot on the stove.

  • Mix crushed cookies with the melted butter.

  • Press half of the mixture in the bottom of a 10-inch pie plate and chill in the fridge. Set aside the rest of the cookie mixture.
  • Melt the remaining butter alongside chocolate in a small saucepan over low heat. Keep a very close eye as chocolate can burn easily!
    3 ounces unsweetened dark chocolate
  • When the chocolate butter mixture is melted, take it off of the heat and stir in the sugar.
    2/3 cups granulated sugar
  • Gradually pour in the evaporated milk and make sure to mix it while pouring. Note: it is important to pour the evaporated milk in slowly. This is because melted chocolate can seize and harden when introduced to a cold liquid. A gentle whisking throughout will also help!

  • Stir in the vanilla extract and set aside the fudge mixture to cool.

  • Remove the chilled pie crust from the fridge. Top the crust with coffee ice cream, and smooth out the top. Spread out the remaining crushed Oreos and place in the freezer.

  • Once the ice cream has firmed up in the freezer, you can remove it for the next step. Spread the fudge over the ice cream layer and pop it in the freezer again.
  • In a stand mixer, or in a bowl using an electric mixer, whip heavy cream and powdered sugar until it becomes thick. When you are able to make soft peaks with the whisk, your whipped cream is ready!
    1 cup heavy whipping cream, 3 Tablespoons confectioners’ sugar
  • Top the pie with whipped cream and store in the freezer until you are ready to serve. Serve with slivered almonds, caramel, and fudge.

*Tip: Slice with a hot knife!
Top with whipped cream and sprinkle with almonds, caramel and chocolate sauce. Enjoy. Eat. Repeat.
