Pizza Stuffed Chicken Breasts

- 3-4 chicken breasts about 6 ounces each
- 1 Tablespoon dried Italian herbs divided
- 1 Tablespoon garlic powder divided
- Kosher salt to taste
- Black pepper to taste
- 1 24-ounce jar marinara sauce
- 1 cup turkey pepperoni slices
- 2 cups shredded mozzarella cheese divided
- 2 Tablespoons olive oil
Preheat the oven to 350 degrees Fahrenheit.
Place the chicken on a cutting board, and use a sharp knife to slice down the center creating a pocket in each breast.

Sprinkle the Italian herbs, garlic powder, salt, and pepper in the middle of the chicken. Add 2 Tablespoons of marinara sauce on top followed by 3-4 pepperoni slices and ¼-⅓ cup Mozzarella cheese.

Fold the chicken onto itself, and add more seasonings.
Heat the oil in a non-stick skillet over medium-high heat. Sear the chicken on both sides just until browned.
2 Tablespoons olive oil
Pour the remaining marinara on top followed by the cheese and pepperoni.
Bake uncovered 25-30 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
Serve warm with extra Parmesan cheese and crushed red pepper flakes, if desired.
Store in an airtight container in the fridge for up to 3 days.
