  • 1/4 cup unsalted butter melted
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/4 cup fresh parsley chopped
  • 1/2 cup Parmesan cheese
  • 1/4 cup panko bread crumbs
  • 32 ounces baby carrots

Instructions

  • Preheat the oven to 400° F.
  • Add the melted butter, smoked paprika, salt, pepper, oregano, parsley, Parmesan, and panko breadcrumbs to a 13x9 baking dish. Mix to combine.
  • Arrange the carrots in an even layer on top.
  • Bake 35-40 minutes or until the carrots are tender, and enjoy warm!
