- 6-8 small cucumbers
- ⅓ cup plain yogurt
- 1 garlic clove minced
- 3 Tablespoons extra virgin olive oil
- 4 Tablespoons fresh dill chopped
- Optional: crushed red pepper flakes to taste
Wash and dry the cucumbers. Chop off both ends.
6-8 small cucumbers
Place a cucumber on a cutting board between two chopsticks. Make diagonal slices down both sides. Repeat until all the cucumbers have been sliced.
Sprinkle salt over the cucumbers, and let them soak for 5 minutes. Rinse with cold water and strain.
In a separate bowl, combine the yogurt, garlic, olive oil, fresh dill, and red pepper flakes.
