Cucumber Yogurt Salad Recipe

Ingredients

  • 6-8 small cucumbers
  • cup plain yogurt
  • 1 garlic clove minced
  • 3 Tablespoons extra virgin olive oil
  • 4 Tablespoons fresh dill chopped
  • Optional: crushed red pepper flakes to taste

Instructions

  • Wash and dry the cucumbers. Chop off both ends.
    6-8 small cucumbers
  • Place a cucumber on a cutting board between two chopsticks. Make diagonal slices down both sides. Repeat until all the cucumbers have been sliced.
  • Sprinkle salt over the cucumbers, and let them soak for 5 minutes. Rinse with cold water and strain.
  • In a separate bowl, combine the yogurt, garlic, olive oil, fresh dill, and red pepper flakes.
    ⅓ cup plain yogurt, 1 garlic clove, 3 Tablespoons extra virgin olive oil, 4 Tablespoons fresh dill, Optional: crushed red pepper flakes to taste
  • Coat the cucumbers with the mixture, and enjoy!
