  • 1 pound chicken breast cut into 1-inch pieces
  • 1/2 red onion cubed
  • 1 large zucchini chopped
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 2 Tablespoons extra virgin olive oil
  • 2 garlic cloves minced
  • 2 Tablespoons Cajun seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  • Preheat the air fryer to 380 degrees Fahrenheit.
  • Arrange the chicken and vegetables in a single layer in the basket.
    1 pound chicken breast, 1/2 red onion, 1 large zucchini, 1 red bell pepper, 1 yellow bell pepper
  • Drizzle the olive oil on top. Add the garlic and seasonings, and toss to combine, making sure the chicken and vegetables are completely coated.
    2 Tablespoons extra virgin olive oil, 2 garlic cloves, 2 Tablespoons Cajun seasoning, Salt to taste, Black pepper to taste
  • Air fry for 23-25 minutes, flipping the chicken and vegetables over halfway through.
  • Serve warm over rice or cauliflower rice.
  • Store in an airtight container in the fridge for up to 3 days.
