Feta Roasted Red Pepper Dip with Crispy Chickpeas

For the Roasted Red Pepper Dip:
- 2 cups crumbled feta cheese
- ¼ cup roasted red peppers
- Lemon juice to taste
For the Crispy Chickpeas:
- 1 can chickpeas rinsed and drained, dried
- 2 Tablespoons olive oil
- 2 Tablespoons Za’atar
For the Roasted Red Pepper Dip:
Place all of the ingredients in the bowl of a high-speed blender or food processor.
2 cups crumbled feta cheese, ¼ cup roasted red peppers, Lemon juice to taste
Pulse until smooth and creamy.
For the Crispy Chickpeas:
Preheat the air fryer to 350 degrees Fahrenheit.
Toss the chickpeas in olive oil and seasonings, coating evenly.
1 can chickpeas, 2 Tablespoons olive oil, 2 Tablespoons Za’atar
Air fry 3-5 minutes or until golden and crisp, shaking halfway through.
Top the roasted red pepper dip with the chickpeas, and serve.
Store the roasted red pepper dip in an airtight container in the fridge for up to 4 days.
