Ingredients

For the Dressing

  • ¼ cup olive oil
  • 1 lemon juiced
  • 1 teaspoon vinegar
  • Salt to taste
  • ½ teaspoon pepper
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 Tablespoon honey

For the Salad

  • 2 (15 ounce) cans chickpeas
  • 1 (15 ounce) can black beans
  • 2 cups chopped cucumbers
  • 1 large red onion chopped
  • ½ cup fresh parsley
  • ½ cup fresh cilantro
  • 2 cups chopped tomatoes
  • 1 cup chopped green olives
  • 1 cup chopped kalamata olives

Instructions

  • Combine the dressing ingredients in a small bowl. Mix to combine.

  • Chop the veggies.
  • Add all of the ingredients to a large bowl. Toss to combine.
