Add all purpose flour, cream of wheat, yeast, sugar, baking powder, and salt to a blender. Pour in water and blend it all together.
2 cups all purpose flour, 1/2 cup cream of wheat, 1 Tablespoon regular yeast, 2 Tablespoons granulated sugar, 1/2 teaspoon baking powder, 1 pinch of salt, 3 cups room temperature water
When the ingredients are fully combined, add baking soda to the mix. Pulse together a few times, but be careful not to over-blend after adding the baking soda. Cover and set aside for 20 minutes.

Scoop the Atayef batter into a hot pan using a small ladle.
Cook the Atayef until the top side bubbles up. It will look like a cross between a pancake and a crumpet!
Cover the Atayef with a towel until you finish making the whole batch.
Note: Make sure that the Atayef remain covered until you finish making them. Do not skip this step! Otherwise, they will dry out and you will not be able to pinch them shut.
Gently fold the Atayef in half, with the bubbles on the inside. Pinch the bottom half to create a cone.
Place the cones in the air fryer.
Spray with cooking oil set air fryer at 350 degrees F for 6-8 minutes or until golden.
Remove from the air fryer and allow them to cool.
Whip heavy cream using a hand mixer or stand mixer until you have whipped cream.
2 cups fresh whipped cream or dairy-free whipped topping.
Fill the Atayef. You can fill it by scooping the whipped cream in with a spoon, or you can use a whipped cream canister.
Dip the tops of the cones in crushed pistachios.

Drizzle simple syrup over the top and serve the Atayef!
