One Pot Chicken Tetrazzini

This one pot chicken tetrazzini is so easy to make and requires less that 20 minutes! It's creamy, simple, and best of all, easy clean up!

  • 1 Tablespoon olive oil
  • 8 ounces chicken breast cubed
  • 2 teaspoons dried oregano
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 8 ounces shiitake mushrooms sliced
  • 16 ounces pot sized linguini
  • 4 cups low-sodium chicken broth
  • 3/4 cup parmesan
  • 1/3 cup heavy cream
  • 1/2 cup whipped cream cheese
  • Parsley for garnish

Instructions

  • In a large enameled or heavy pot add olive oil on medium high heat.

  • Add diced chicken, oregano, salt, pepper, and mushrooms. Sauté until the chicken is no longer pink, about 3-4 minutes 
    8 ounces chicken breast, 2 teaspoons dried oregano, 1 teaspoon salt, ½ teaspoon black pepper, 8 ounces shiitake mushrooms
  • Add uncooked pasta and broth, bring to a boil, then cover and reduce heat to medium low and cook for 8-10 minutes or until pasta is al-dente.
    16 ounces pot sized linguini, 4 cups low-sodium chicken broth
  • Add parmesan, heavy cream, and cream cheese.
    1/3 cup heavy cream, 3/4 cup parmesan, 1/2 cup whipped cream cheese
  • Stir together until thoroughly blended and creamy.
  • Garnish with Italian flat leaf parsley.
    Parsley for garnish
