Easy One Pan Spaghetti

This easy one pan spaghetti is a healthy weeknight pasta dish made with simple ingredients and tons of flavor! Fresh tomatoes, veggies, and herbs are baked to caramelized perfection and tossed with al dente noodles for a comforting dinner that’s good for you, too.

Ingredients

  • 32 ounce cherry tomatoes
  • 1 large onion, sliced
  • 6 peeled garlic cloves
  • Salt to taste
  • Black pepper to taste
  • 1 Tablespoon dried Italian seasoning
  • 1 cup fresh basil
  • 1 teaspoon dried oregano
  • 1/2 cup good quality olive oil
  • 16 ounces spaghetti cooked according to package instructions
  • 2 Tablespoons tomato paste
  • Optional: Parmesan cheese shavings for garnish

Instructions

  • Preheat oven to 400 degrees Fahrenheit. On a large baking sheet, add tomatoes, onions, garlic, salt, pepper, Italian seasoning, basil, and oregano. Drizzle olive oil on top, and toss to coat.

  • Bake for 30-35 minutes or until tomatoes have burst and garlic is tender. Gently press down garlic cloves with a fork to release their flavor.
  • Add cooked spaghetti and tomato paste to the baking sheet, and toss to combine.
    16 ounces spaghetti, 2 Tablespoons tomato paste
  • Sprinkle Parmesan on top, if desired, and serve warm.
    Optional: Parmesan cheese shavings for garnish
