- 3 large bananas extra ripe
- 1 ½ cups whole milk or milk of choice
- 2 large eggs
- ¼ cup maple syrup
- 2 teaspoons vanilla extract
- ½ cup creamy Old Home peanut butter divided
- 3 cups rolled oats
- ½ cup unsweetened cocoa powder
- 1 teaspoon kosher salt
- ½ cup mini chocolate chips + more for topping
Preheat the oven to 350 degrees Fahrenheit. Grease a 9x13 baking dish, and set aside.
Use a fork to mash the bananas in a large bowl. Add the milk, eggs, maple syrup, vanilla extract, and ½ the peanut butter. Whisk to combine.

Add the oats, cocoa powder, and salt. Mix until smooth. Fold in the chocolate chips.

Pour the batter into the prepared baking dish.
Drizzle the remaining peanut butter on top along with a sprinkle of extra chocolate chips.
Bake 25-30 minutes or until the oatmeal is set.
Slice the oatmeal bake recipe into squares. Enjoy warm, or refrigerate.
Store in an airtight container in the fridge for up to 4 days.
