Brownie Pudding with Peanut Butter Swirls

Ingredients

  • 5 large eggs room temperature
  • 2 cups organic granulated sugar
  • 2 teaspoons vanilla extract
  • ½ cup all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 sticks unsalted butter melted and slightly cooled
  • 8-9 mini peanut butter cups
  • ½ cup Old Home Creamy Peanut Butter melted in microwave for 30 seconds

Instructions

  • Preheat the oven to 325° Fahrenheit. Butter a 2-quart oval baking dish. Set aside.
  • Add the eggs and sugar to a large bowl, use an electric mixer to beat on medium-high speed for 5-10 minutes or until the ingredients are well combined and thick.

  • Add the vanilla, cocoa powder, and flour, and mix until just combined. With the mixer on low, slowly pour in the butter, mixing until just combined.
    2 teaspoons vanilla extract, ½ cup all-purpose flour, ¾ cup unsweetened cocoa powder, 1 sticks unsalted butter
  • Pour ½ the batter into the prepared baking dish. Sprinkle the peanut butter cups on top followed by the remaining batter. Drizzle the melted peanut butter on top, and swirl with a knife or toothpick.
    ½ cup Old Home Creamy Peanut Butter, 8-9 mini peanut butter cups
  • Place the baking dish in a larger baking pan. Add hot top water to the larger pan until it reaches halfway up the side of the smaller baking dish.
  • Bake for 50-6o minutes or until the outside of the brownie is set.
  • Cool slightly, and serve warm with a scoop of ice cream, if desired.
