  • 4 cups homemade bolognese sauce
  • 8 ounces string cheese cut into small enough pieces to fit into the tubes of rigatoni
  • 1 1/2 pounds uncooked rigatoni
  • 1 cup Ricotta cheese
  • 8 ounces Mozzarella cheese shredded
  • 3 cups chicken stock or choice of broth
  • Optional: fresh parsley to garnish

Instructions

  • In the bowl of the pressure cooker, and half of the bolognese sauce.
    4 cups homemade bolognese sauce
  • Slice the string cheese into bite-sized pieces, and stuff each piece inside the rigatoni noodles.
    8 ounces string cheese, 1 1/2 pounds uncooked rigatoni
  • Arrange the stuffed noodles over the pasta sauce, making sure they're packed tight and touching.
  • Add the remaining bolognese on top followed by the Ricotta and Mozzarella cheese.
    1 cup Ricotta cheese, 8 ounces Mozzarella cheese
  • Pour the chicken broth on top.
    3 cups chicken stock
  • Place the lid on lock, and set the valve to the sealing position. Then, press the "Pasta" setting.
  • When the timer goes off, do an immediate pressure release, and stir well. Garnish with fresh parsley, if desired.
    Optional: fresh parsley to garnish
