  • 2 eggs
  • 1 cup organic unbleached all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 th cup organic cane sugar
  • 1 cup whole-milk ricotta cheese
  • 2 teaspoons vanilla extract
  • vegetable oil for frying
  • Powdered sugar for dusting
  • Nutella


  • In a large bowl, with a hand mixer beat eggs until they start to foam, about 2-3 minutes.
  • Stir in flour, baking powder, salt, vanilla, and sugar until just combined. Be careful not to overmix!
  • Fold in ricotta cheese until mixture looks incorporated
  • In a deep skillet, heat 2 inches of oil to 350 degrees F.
  • With a small cookie scoop or a tablespoon carefully drop batter in oil.
  • Cook for 3-4 minutes turning frequently until golden brown
  • Drain on paper towels and serve with Nutella and a dusting of powdered sugar
