That said, we’re not always exactly in the mood to make a full batch. That’s when we pull out this Deep Dish Chocolate Chip Cookie with Marshmallows! It’s sweet, chocolatey, and full of a melty marshmallow filling no one can resist. 

Even better, it bakes in a single ramekin in less than 30 minutes. That means you can get in and out of the kitchen fast without making a mess. Plus, you don’t even have to share if you don’t want to! It’ll be our little secret. 

Ingredients

The items needed couldn’t be simpler with this 3-ingredient homemade Deep Dish Chocolate Chip Cookie! 

  • Cookie Dough – If you’re like us, you pretty much always have cookie dough waiting in your fridge or freezer. However to save time, simply use pre-made store-bought cookie dough. We’re partial to classic chocolate chip, but any flavor you like best can be used. 
  • Chocolate Chips – Use milk chocolate or semi-sweet chocolate chips to enhance the s’mores flavor of the filling. 
  • Marshmallows – We recommend using small marshmallows instead of a single large one as they’ll melt better and create a smoother center. 

As long as you’ve got cookie dough ready to go, this dessert can be prepared in minutes. The only hard part is waiting for it to bake! 

  1. Press half the cookie dough into an even layer in the bottom of a ramekin
  2. Sprinkle the chocolate chips and marshmallows on top. 
  3. Spread the rest of the cookie dough over the mixture. 
  4. Place the ramekin in the oven, letting the deep dish cookie bake until the dough is fluffy and golden.
  5. Set the cookie aside to cool for about 10 minutes, and dig in while it’s warm!

  • Adding a drizzle of peanut butter to the center. 
  • Sprinkling chopped nuts over the dough. 
Can I make two? 

If you want to double this recipe, we recommend making it in two separate ramekins. This ensures it bakes evenly! 

Can I turn this recipe into a pizzookie? 

We haven’t tried it, but it should work! Just fit the ingredients to your skillet or pan, and adjust the baking time as needed. 

Can I make this Deep Dish Chocolate Chip Cookie ahead of time? 

This recipe is best enjoyed right away while it’s still warm and gooey. However, if you don’t eat it all at once or really want to make it ahead of time, it can be covered and stored at room temperature for up to 2 days. When you’re ready to eat we suggest popping it in the oven or microwave to heat it back up. Just be careful not to let it overcook!

Ingredients  

  • ½ cup chocolate chip cookie dough
  • ¼ cup milk chocolate chips*
  • ¼ cup marshmallows

Instructions 

  • Preheat the oven to 325° Fahrenheit. Grease a 10-inch ramekin.
  • Spread ½ the cookie dough in an even layer in the bottom of the ramekin.
  • Sprinkle the chocolate chips and marshmallows on top.
  • Add the remaining cookie dough, spreading it out evenly.
  • Bake 20-25 minutes or until the cookie dough is golden brown. Be careful not to overbake!
  • Cool for 10 minutes, and enjoy!
