Life-Changing Lazy Lasagna

Are you ever in the mood for classic lasagna but don’t want to take the time to layer all of the ingredients and bake it in the oven? What if we told you that you could all the warm flavors you love with literally half the work? Sounds crazy, but it’s true! Let us introduce you to your new favorite lazy lasagna recipe. It’s made with minimal ingredients and cooked in a pressure cooker so all you have to do is combine the ingredients and come back later! Quick, easy, and delicious, dinner truly doesn’t get better than this. 

Minimal Ingredients

Unlike some pasta recipes that require a million items, the ingredient list for this lasagna is super short and easy to find! 

  • Pasta – We used rigatoni, but any large tubular noodle can be used.
  • Cheese – String cheese is stuffed inside of the pasta, and Mozzarella and Ricotta is layered on top to emulate the original taste and texture.
  • Bolognese Sauce Homemade bolognese sauce creates the best flavor, but if needed, you could opt for store-bought instead. 
  • Chicken Stock – This helps cook the noodles and creates a richer taste than water would. 

How to Make Lazy Lasagna

Once you make this lazy lasagna recipe, you’ll never go back to the oven baked version again! 

  1. Add half of the bolognese sauce to the bottom of your pressure cooker. 
  2. Stuff the string cheese into the center of each raw noodle. Then, arrange the noodles over the sauce, making sure they are tightly packed. 
  3. Top with the remaining sauce and cheese, and pour the broth on top. 
  4. Place the lid on top, making sure it locks, and set the valve to the “sealing” position. Press the “pasta” setting. 
  5. Once the automatic timer has gone off, do an immediate pressure release, and stir well. 
  6. Garnish with fresh parsley, and serve warm

Tips and Tricks

Don’t add too much liquid. You want the noodles to be just covered with the broth. Otherwise, your lasagna might turn out soupy. 

Include meat. Bulk up this recipe by adding ground beef or turkey to the pasta sauce. 

Keep an eye on your pressure cooker. Every device cooks differently. So, be sure to keep an eye on your pressure cooker in order to prevent the lasagna from burning.

Can I Use an Instant Pot Instead?

We haven’t tested it, but you should be able to use an Instant Pot to create this lazy lasagna recipe. Just note that the labels on your Instant Pot may differ in name. 

Storing and Reheating

With how addicting this pasta is, it’s doubtful you’ll have any leftovers. However, if you do, they can be stored in an airtight container in the fridge for up to 5 days! We do not recommend freezing leftovers as the dairy will not thaw well.

Ingredients  

  • 4 cups homemade bolognese sauce
  • 8 ounces string cheese cut into small enough pieces to fit into the tubes of rigatoni
  • 1 1/2 pounds uncooked rigatoni
  • 1 cup Ricotta cheese
  • 8 ounces Mozzarella cheese shredded
  • 3 cups chicken stock or choice of broth
  • Optional: fresh parsley to garnish

Instructions 

  • In the bowl of the pressure cooker, and half of the bolognese sauce.
    4 cups homemade bolognese sauce
  • Slice the string cheese into bite-sized pieces, and stuff each piece inside the rigatoni noodles.
    8 ounces string cheese, 1 1/2 pounds uncooked rigatoni
  • Arrange the stuffed noodles over the pasta sauce, making sure they're packed tight and touching.
  • Add the remaining bolognese on top followed by the Ricotta and Mozzarella cheese.
    1 cup Ricotta cheese, 8 ounces Mozzarella cheese
  • Pour the chicken broth on top.
    3 cups chicken stock
  • Place the lid on lock, and set the valve to the sealing position. Then, press the "Pasta" setting.
  • When the timer goes off, do an immediate pressure release, and stir well. Garnish with fresh parsley, if desired.
    Optional: fresh parsley to garnish

        1. We recommend slow cooking at high for 3-4 hours or until pasta is al dente! Let us know how it works out!

  1. I have a Cuisinart pressure cooker with low, high, browning, saute, simmer, and keep warm. Is the equivalent to the “pasta” setting like 5 min on high?

  2. The recipe above is missing a step or two. If it wasn’t for the video I wouldn’t know what to do with the ricotta cheese.

  3. First off, I believe those are manicotti not rigatoni. It’s impossible to shove cheese sticks in rigatoni, wish I would have known this before because rigatoni takes way more time to try to stuff. Secondly, the heading specifically says “crock pot” and I got it all ready for my crock pot, when in reality you used a instant pot. This is misleading.

    1. It is in fact rigatoni and is super simple to slide right in, obviously you have to cut the cheese stick and not try to shove an entire cheese stick in! I just prepped this recipe…. waiting for it to finish!

  4. I’m using a crockpot, not a pressure cooker. How long in the crockpot on low or high setting? Thanks!!

    1. We’ve never tried it in a slow cooker but you try setting it on high for 2 hours and check on it after 1.5 hours. Be sure to let us know how it turns out!
