Cherry Garcia Ice Cream

Ingredients

  • 12 oz frozen pitted cherries
  • 1/2 cup tart cherry juice such as Cheribundi
  • 1/4 organic cane sugar
  • 1 tablespoon corn starch
  • 1 pint heavy cream
  • 15 oz can organic condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chunks

Instructions

  • In a sauce pan over medium heat combine cane sugar, corn starch and juice. Stir just until corn starch is dissolved. Add in frozen cherries. Cook for 5 minutes until sauce has thickened. Cool completely.
  • In a large mixing bowl beat heavy cream until stiff peaks form. Add in remaining ingredients and fold with a spatula.
  • Pour in a loaf pan and swirl as much cherry sauce as you would like. Top with extra chocolate chunks. Freeze for 8 hours or overnight. Serve with hot fudge sauce.
