What we love about Billy Miner ice cream pie

We have a sweet spot in our hearts for Oreo cookies, so any dessert that incorporates them has our attention! Billy Miner pie is known for its Oreo pie crust, coffee flavored ice cream filling and a drizzle of hot fudge and caramel sauce.

Our version of this indulgent dessert recipe takes it up another level. While the Billy Miner ice cream pie is great as it is, we decided to add another layer of Oreo crust AND create an entire layer of fudge. And don’t forget our homemade whipped cream layer!

What is Billy Miner ice cream pie?

If you have never heard of this pie before, you might be wondering about the history of Billy Miner pie. And this delicious dessert recipe has a truly unique history behind it!

This scrumptious ice cream pie is named for a real person! Billy Miner is a notorious train robber who lived in Canada in the late 1800s and early 1900s. He was most well known for robbing the Canadian Pacific Railroad in the fall of 1904. He was known as a “Gentleman Bandit” because he never used any violence when robbing trains!

The Billy Miner ice cream pie was first made at a restaurant called the Keg Steakhouse & Bar in western Canada. Not only does Billy Miner have this dessert namesake, but he also has a bunch of drinks named after him and his adventures, too! This restaurant also famously decorated their dining room with images of Billy Miner as well.

How to make Billy Miner ice cream pie

  1. Melt 1/4 cup butter in the microwave or in a small stock pot on the stove.
  2. Mix crushed cookies with the melted butter.
  3. Press half of the mixture in the bottom of a 10-inch pie plate and chill in the fridge. Set aside the rest of the cookie mixture.
  4. Melt the remaining butter alongside chocolate in a small saucepan over low heat. Keep a very close eye as chocolate can burn easily!
  5. When the chocolate butter mixture is melted, take it off of the heat and stir in the sugar.
  6. Gradually pour in the evaporated milk and make sure to mix it while pouring.
    • Note: it is important to pour the evaporated milk in slowly. This is because melted chocolate can seize and harden when introduced to a cold liquid. A gentle whisking throughout will also help!
  7. Stir in the vanilla extract and set aside the fudge mixture to cool.
  8. Remove the chilled pie crust from the fridge. Top the crust with coffee ice cream, and smooth out the top. Spread out the remaining crushed Oreos and place in the freezer.
  9. Once the ice cream has firmed up in the freezer, you can remove it for the next step. Spread the fudge over the ice cream layer and pop it in the freezer again.
  10. In a stand mixer, or in a bowl using an electric mixer, whip heavy cream and powdered sugar until it becomes thick. When you are able to make soft peaks with the whisk, your whipped cream is ready!
  11. Top the pie with whipped cream and store in the freezer until you are ready to serve.

How to serve Billy Miner ice cream pie

When you are ready to serve, remove the ice cream pie and let it sit on the counter for a couple minutes. And here is a pro tip for you: run your knife under hot water and dry it before slicing. A hot knife will help you get a clean slice without compressing any of the ingredients!

Billy Miner Ice Cream Pie

If you love ice cream, you will love this pie! Loaded with crushed cookie layers, a thick fudge layer, coffee ice cream, and whipped topping. Top with sliced almonds, caramel, and chocolate sauce!

Ingredients  

  • 1/2 cup butter divided
  • 36 Oreo cookies crushed
  • 3 ounces unsweetened dark chocolate
  • 2/3 cups granulated sugar
  • 2/3 cups evaporated milk
  • 1 teaspoon vanilla extract
  • 1 1/2 quarts coffee ice cream such as Haagen Daaz, slightly softened
  • 1 cup heavy whipping cream
  • 3 Tablespoons confectioners’ sugar
  • 1 cup sliced almonds

Instructions

  • Once the ice cream has firmed up in the freezer, you can remove it for the next step. Spread the fudge over the ice cream layer and pop it in the freezer again.
  • In a stand mixer, or in a bowl using an electric mixer, whip heavy cream and powdered sugar until it becomes thick. When you are able to make soft peaks with the whisk, your whipped cream is ready!
    1 cup heavy whipping cream, 3 Tablespoons confectioners’ sugar
  • Top the pie with whipped cream and store in the freezer until you are ready to serve. Serve with slivered almonds, caramel, and fudge.
    1 cup sliced almonds

  1. It says to divide the butter, but doesn’t say how to divide it in the instructions (1/4 c each time, or …?)

    1. I just made this but remade the chocolate fudge sauce, 2/3 cup evaporated milk made it too thin – is this measurement correct ??
