Baklava Skillet Pancake

If you love baklava, now you can have it for breakfast! We jazz up store-bought pancake mix by topping it with a walnut-pistachio mixture and a healthy drizzle of honey.

What is baklava

Baklava is an amazing dessert that is popular in the Middle East, Turkey, and Greece. It is a dessert pastry filled with nuts. It consists of layers of buttery phyllo dough that is sweetened with honey or simple syrup.  Every region has their version of baklava. We love making baklava with just walnuts but some people do pistachios, or a combination of both.

How to make a baklava skillet pancake

  1. In the bowl of a food processor add walnuts, pistachios, and sugar. Pulse until finely chopped.
  2. In a mix bowl add pancake mix, cinnamon, nutmeg, vanilla, water, and 1 tbsp ghee or melted butter. Gently whisk until combined. Do not overmix, it’s okay if it has some lumps.
  3. In a 10-inch skillet spread 1/4 cup ghee or melted butter. Add pancake mix.
  4. Top with walnut-pistachio mixture. Bake at 350 degrees F. for 15-20 minutes or until cooked. Top with a healthy drizzle of honey and a dollop of creme fraiche.

How to make homemade pancake mix

Did you know you can make a big batch of homemade pancake mix? It’s so easy and you can store it in an air tight container and use it as needed. Here is a simple measurement for the dry ingredients.

  • 6 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons kosher salt

Whisk all these ingredients together and store.

Once you are ready to make the mix

1 cup pancake mix

3/4 cup  milk + 2 tbsp vinegar

1 large egg

1 tsp vanilla extract

3 tbsp melted butter

Directions:

Add the milk and vinegar in mixing bowl. Set aside for 10 minutes to sour.

Add vanilla, egg and whisk together. Stir in the pancake mix and melted butter.

Cook the pancakes on a griddle.

Ingredients
  

  • 1 1/2 cup pancake mix
  • 3/4 cup water or milk (option to do a non-dairy milk)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/4 cup ghee or melted butter
  • 1 tbsp ghee or melted butter
  • 1/2 cup walnuts
  • 1/2 cup pistachios
  • 2 tbsp sugar
  • honey and creme fraiche for serving

Instructions

Substitutions and modifications:

-For a more cake-y pancake, beat in 1 egg.

-Maple syrup for honey.

-Only walnuts and no pistachios and vice versa.

-Add hazelnuts into the mix.

-In the nut mixture- add 1/4 tsp nutmeg and 1/8 tsp cloves for a deeper flavor.

-If the nuts are unsalted, add 1/2 tsp sea salt to help bring out the flavors.
