Tiramisu Pancakes

 

  • Ingredients

    • 3/4 cup milk
    • 2 tablespoons white vinegar
    • 1 cup organic all-purpose flour
    • 3 tablespoons organic sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 egg
    • 2 tablespoons butter, melted
    • 1 teaspoon vanilla extract
    • cooking spray
    • ¼ c. marscapone cheese, room temperature
    • ½ c. heavy whipping cream
    • 3 tablespoons powdered sugar
    • 1/2 espresso or strong coffee
    • cocoa powder

 

  • Directions

    1. To make buttermilk: Combine milk with vinegar in a medium bowl and set aside for 5 minutes.
    2. Stir the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg, butter, buttermilk, and vanilla. Whisk together until combined. DO NOT OVERMIX! Lumps are okay.
    3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet. Once it has bubbled up, flip over and cook on other side.
    4. For the whipped cream: Combine the mascarpone, whipping cream, and powdered sugar in a bowl. Whisk with a hand blender or a mixer until soft peaks form.
    5. To assemble: Place one pancake on a plate and spoon over the coffee until it soaks into the pancake. About 1-2 tablespoons per pancake but feel free to add more or less depending on desired strength. Dallop the whip cream over and dust with cocoa powder. If you like your pancakes really sweet serve with maple syrup.
