Roasted Rainbow Veggies and Chicken



  • I onion, diced
  • 2 cups broccoli florets
  • 1 cup pepper of choice, chopped
  • 2 cups baby carrots
  • 1 1/2 cup cherry tomatoes
  • 3-4 tablespoons olive oil
  • 3-4 tablespoons balsamic vinegar
  • 4 cloves garlic, sliced
  • Salt and pepper to taste
  • 4 chicken breasts
  • Olive oil
  • Garlic cloves
  • Salt and pepper
  • Oregano
  • (Feel free to add your favorite spices or seasonings!)

Preheat oven to 400 degrees F. Place all the vegetables on a sheet pan. Drizzle with olive oil, balsamic, salt and pepper. Distribute garlic cloves over the vegetables.

Take four foil pieces, large enough to fold over and turn into a pouch. Place one piece of chicken breast onto each piece of foil. Drizzle with olive oil, your favorite seasonings, garlic cloves, salt and pepper. Wrap the foil around the chicken. Place onto a separate sheet pan. Bake both pans for 25-30 minutes
