Rice Crispy Stuffed French Toast



6 slices brioche, crusts removed

6 tablespoons marshmallow fluff

3 chocolate squares, such as Ghirardelli

1 cup Rice Krispy cereal

Egg mixture:

2 whole eggs
3 tablespoons milk
1 tablespoons Organic Brown Sugar
2 tablespoons Butter
1/2 teaspoon Ground Cinnamon
1 teaspoons Vanilla Extract


Spread 2 tablespoons marshmallow fluff onto a slice of brioche. Add one square of chocolate over the fluff. Top with another slice of brioche. Pinch the ends with your fingers or a fork to seal shut. Repeat with the remaining slices.

In a bowl, whisk together eggs, milk, sugar, cinnamon, and vanilla. Dip each stuffed french toast into the egg mixture.

In a separate plate add the cereal. Place the french toast and flip until both sides are coated with the cereal.

*Heat a large non-stick skillet over medium-low heat, add butter. Place the french toast onto the skillet. Flip once it has turned golden brown. Watch carefully so it does not burn!

*Tip: These can also be baked at 350 degrees F for 15-20 minutes, or until golden brown!

Serve with chocolate sauce and whipped cream!
