Loaded Breakfast Bake

1 package white bread, such as Canyon Bakehouse Gluten Free bread

1/2 lb lean ground beef or sausage
4 slices colby jack cheese

1 cup grated white cheddar cheese
1/2 cup bell peppers, chopped
6 large eggs, such as Organic Valley organic eggs
1 cup whole milk
1/2 tsp kosher salt
1/4 tsp ground black pepper


Preheat the oven to 350 degrees F.

In a large bowl, whisk together the eggs, milk, salt and pepper. Set aside.
Cut the crusts from the bread. Arrange in a single layer in the prepared baking dish, cutting pieces to fit as necessary to cover the bottom of the dish. Pour 1/3rd of the egg mixture over the bread. Sprinkle with beef, peppers, and cheese slices. Pour remaining milk mixture over the bread. Top with shredded cheese.
Bake until set and golden, about 40 minutes. Let stand for 10 minutes before serving.
