Cranberry Avocado Spinach Salad

Our friends at Clean Eating Corner shared with us this delicious salad recipe. It was nothing short of amazing! Tons of flavors and textures all happening at once!

• 1 tsp olive oil
• 2 tsp orange zest
• 1/4 cup fresh orange juice
• 2 Tbsp fresh lemon juice
• 2 Tbsp honey
• 2 tsp dijon mustard
• 1/4 tsp salt
• 1 Tbsp poppy seeds

• 2 large chicken breasts, grilled
• 8-10 oz baby spinach
• 2 medium avocados, cored and diced
• 3/4 cup sliced almonds, toasted
• 3/4 cup dried cranberries
– 3/4 cup feta cheese, crumbled

For the dressing: Add all the ingredients in a mason jar. Shake until well blended. Refrigerate until ready to use.
Add all salad ingredients to a large bowl. Pour dressing over top and toss to evenly coat
