Banana Bread 4 ways



  • 1¾ cups all-purpose flour
  • 1½ tsp baking soda
  • ¾ tsp kosher salt
  • 3 large eggs, room temperature
  • 1 cup organic cane sugar
  • 3 large bananas or 1 heaping cup
  • ¾ cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract
  • Your favorite toppings, we used walnuts, milk and semi sweet chocolate chips, peanut butter, white chocolate and macadamia nuts.


Preheat oven to 350°. Coat four mini loaf pans with nonstick spray. Combine the  flour, baking soda, and salt in a medium bowl. In a separate bowl mash the bananas, add eggs, sugar, vanilla extract, and oil and whisk until smooth. Add dry ingredients to banana mixture and stir just until combined. Divide evenly into the loaf pans. Top with all your favorite toppings. Gently stir the toppings into the banana bread and top with some more.

Bake until a tester inserted into the center of bread comes out clean, about 30-35 minutes. Let cook for 10-15 minutes. Turn out onto rack and let cool completely.
